Our decaf process begins with sugarcane that is naturally grown in fields found in Palmira, and then transported to a small town of Timana, Huila (Colombia). Here it is combined with fresh spring water to strip caffeine from the coffee bean that is later decaffeinated in a facility located in Manizales. These Colombian towns cultivate the only natural chemical-free FDA approved decaffeination process in which no additional foreign substances come in contact with the coffee bean. The original aroma and flavor characteristics from the coffee remain even after 97% of the caffeine has been carefully removed. Once the beans are through with the process any residual wash that may remain is further removed by the roasting process and served directly to you, our customer.
LA FINCA ADOPTADA
This coffee comes from our adopted farm which is located in the region Tapias River Canyon in the municipality of Neira – Caldas, Colombia. They are part of the Coffee Cultural Landscape, declared by UNESCO as a World Cultural Heritage Site. The estate has a long tradition in coffee production. It was in the 1930s that the first coffee plants were cultivated in these hills, and have been renewed ever since.
We roast our coffee and serve it fresh. Our goal is to provide you the best possible coffee we can find. Our origin relationships have been built largely through thousands of cupping sessions with producers, millers, and exporters. As a result, we have developed a common purpose and language with some of the most quality-focused producers.
When you buy coffee from us, you are buying coffee directly from the farmers who produced it. We organize two-way transparency, communication, and feedback to create a trade framework that promotes a positive social impact at the source and provides exceptional coffee to consumers.
